Lemon Drizzle Cake
4 oz - butter or margarine
6 oz - self-raising flour
6 oz - castor sugar
2 eggs
1 lemon
4 tbsp milk
3 tbsp icing sugar
Grate lemon and juice lemon.
Mix butter, flour, granulated sugar, eggs, milk and lemon rind. Beat together.
Place in round cake tin.
Bake for 1 hour at 150C (fan oven)
Once cool - mix lemon juice and icing sugar. Pour over cake a little at a time.
Mincemeat Slice
7 oz - self-raising flour
6 oz - butter or margarine
6 oz - castor sugar
4 oz - rolled oats
1lb jar of mincemeat
Mix all together (except mincemeat). Put half into rectangular tin and flatten. Spread over mincemeat on top. Then cover with the remaining mixture. Cook, cool and cut into slices.
Gas Mark 4, 160C (fan) for 35 to 45 mins.
